By default, press books was embedding chapter numbers. I disabled this now.

- Pressbooks is generating one html per chapter.
Blank spaces between chapters are particular to screen size etc.

Go to Appearance -> Theme Options -> Global Options
Un check "Display chapter numbers" and Save changes.
